To bring friends is not recommended, and of course it is not acceptable to leave your friends overnight. You should always be on time for dinner. If it is not convenient for you you'd better inform your family at once and they will leave your dinner in the fridge. If you are over 18 it is allowed to come back home at any time. The main thing is not to make noise and disturb the hosts.

But despite everything, host family still remains the most popular and most useful type of accommodation if your purpose is to study English. Try to make friends with the owners and do not pay attention at small inconveniences and your holiday in Malta will be unforgettable.
